Grandma Great's Pistachio Nut Bread

My mom has always had to trick me into eating new things. Had I known when I tried my first bite of Pistachio Nut Bread that it had sour cream in it I would have never known of it's goodness! My poor mama tried so hard to get me to try foods but I refused majority of them only to try them later and realize how delicious they are and the worst part is I'm still this way! The only consolation I can offer my mom is the satisfaction that I have been sent a picky eater as payback.

This recipe is from my Great Grandma Waddell and it is a stand out favorite. You can pretty much find it at any family gathering of ours... for about two seconds and then it's gone. 

1 pkg Yellow Cake Mix

1 pkg Pistachio Pudding

4 eggs + 2 Tbls water

1 C Sour Cream - (can sub w/ Greek yogurt)

1/2 C ground pistachio nuts - Optional

1/4 C veg or canola oil

Butter and Cinnamon Sugar (to coat the pan and coat the top)

2 bread loaf pans  

Mix ALL ingredients (except for Butter and Cinnamon Sugar) together in a bowl and blend well and set aside.

This makes enough for two loaves so butter two bread pans thoroughly so that no pan is showing through. Pour in a good amount of Cinnamon Sugar and roll it around the pan to coat all sides to create a thick crust.

Pour half of the "bread" mixture into one pan and half into a second. Sprinkle cinnamon sugar over the top lightly. Bake at 350 for 45 minutes.
