Coconut Butter Syrup

Saturday mornings in our house are the furthest thing from relaxingwith a toddler and a newborn. However, big breakfasts are a must around here.  One of our staples for any Saturday breakfast is this Coconut Butter Syrup. It also is the greatest thing that has ever graced my taste buds.   This is by no means healthy, in anyway, but one spoonful of this syrup on your whole grain, gluten, sugar and fat free waffle is worth a cheat meal. Or if you're like me... a cup of it poured over my bisquick waffle that has been doused in butter will do just fine.  
    Coconut Butter Syrup 
  • ½ Cup Salted Butter
  • ½ cup buttermilk (can substitute milk)
  • 1 cup sugar
  • ½ teaspoon baking soda
  • ½ teaspoon coconut flavoring
Heat butter, buttermilk and sugar in saucepan until it starts to boil then take off heat and add baking soda and coconut extract. The baking soda will make the mixture frothy. Wait for the froth to die down and then pour into bottles! I would say shelf life is 3 weeks max but ours never lasts that long so I wouldn't really know!  Let me know if you try it and love it as much as we do!
